Yams versus sweet potatoes, I frankly can’t tell the difference. But I had a lot of them (candied) left over after Thanksgiving dinner.
Since I needed the space in my fridge, we had been eating the leftovers through Sunday.
And still the sweet potatoes/yams remained.
So I decided to make soup.
Well, I adapted the soup recipe for the cooked veggies. And you know what? It wasn’t half bad.
We ate it for lunch on Sunday. Sure it was a little sweeter than I would have liked, even with skimming off the candied syrup, but it tasted good.
